At Bodegas Arzuaga, we always look to improve and take steps to be able to offer you the most complete wine tourism offering in Europe. And that includes the production of our wines, the care for our vineyards and, of course, our gastronomy. Today, we wanted to do a little stop at Taller Arzuaga by Víctor Gutiérrez, our commitment to avant-garde cuisine that goes beyond the kitchen. That’s because from day one, we were determined for every dish to be local and to be able to offer you the best, always respecting the environment. For this reason, we wanted to look back on what we’ve done over recent years.
Taller Arzuaga’s new organic kitchen garden
Those of you who follow us regularly know that at Bodegas Arzuaga, we work every day to always be a little bit better. Our aim is to be able to provide you with a matchless wine, culinary and wine tourism offering, where each element fits perfectly with the next. That’s why it should come as no surprise that our Taller Arzuaga restaurant has gone for an organic kitchen garden to provide a farm-to-table experience. We’re sure you’re familiar with this concept, which has been knocking around the world’s best kitchens for some years now and means that local produce, direct from the producer, is used in the culinary offering. At Arzuaga, we were also pioneers in farm-to-table. Game from the La Planta estate has featured on our menus for a while now, and the kitchen garden has come to close the sustainability circle.
Standing at 950 metres above sea level, our garden already includes around one hundred varieties planted there: nightshades, legumes and cruciferous vegetables, cucurbits, Chenopodioideae and Compositae, umbellifers, Liliaceae, aromatic perennials, aromatic annuals and edible flowers. Moreover, our Michelin-starred restaurant in Castile and León is Green Energy certified by Iberdrola, guaranteeing that the energy consumed comes from fully renewable sources, and the produce from the garden is treated entirely with natural products.
Arzuaga continues its commitment to sustainability with solar panels and its own water treatment facility
Now, at Arzuaga, we’re continuing on our path to sustainability with two new initiatives focused on green energy and improving our surroundings. In the winery, on the one hand, we’ve launched a 600-kilowatt project to produce our own electricity. By installing solar panels, at Arzuaga, we’re going to generate the electricity needed to supply the winery, our five-star hotel and the entire Bodegas Arzuaga building. We also plan to install more panels to produce electricity for the spa.
On the other hand, we’ve also opened our own water treatment facility at Bodegas Arzuaga, complying with all the regulations currently in force, so the winery’s activity will not interfere with or alter the water quality of the Douro River. This facility is equivalent to one that could serve a town of 4,000 people, and its purpose is to have the water reach the river in perfect condition and be considered safe drinking water.
