Taller Arzuaga, the harmony of wines and food at Madrid Fusión

Today we’d like to tell you about a very special event that we here at Bodegas Arzuaga held at Madrid Fusión. As you know, Madrid Fusión is the world’s leading gastronomy fair that brings together thousands of people from the world of food and drink. And of course, Arzuaga had to be there again this year. In addition to our stand, this year we brought a touch of our personality with a very special tasting where Ignacio Arzuaga and Víctor Gutiérrez explained the particular pairing between our wines and some dishes created by the chef.

The attendees included a wide range of sommeliers and prestigious wine professionals, as well as friends of Bodegas Arzuaga such as Paz Vega and Anne Igartiburu. It was a very special audience who came to learn a bit more about our philosophy and our pairings.

The tasting began with our Laderas del Norte 2017 and a delicious suckling pig and purple corn taco. The wine’s clean, brilliant Picota cherry colour with hints of violet is a good visual match for the taco. Round, fresh and elegant, the wine is velvety on the palate and combines perfectly with the unctuousness of the suckling pig and the sweet touch of the purple corn.

Our Rosae 2020, on the other hand, pairs perfectly with the croaker tiradito. The freshness of the wine goes with the tangy notes of this delicious dish of raw fish in a spicy citrus sauce. One of the most surprising pairings was our Fan D. Oro 2018 and venison marrow. Marrow is a great delicacy that many people aren’t familiar with, and it was an excellent match for the floral nuances of our Chardonnay.

And after the fish and marrow courses, we went back to suckling pig, this time accompanied by caviar. The sensuality and elegance of our Amaya Arzuaga 2016 accompanied suckling pig ear with caviar, a delicate and delicious dish that matches the wine’s great aromatic complexity.

We concluded the tasting with two of our big stars: our Reserva Especial 2015 and La Planta estate roe deer, the expression of Bodegas Arzuaga. The elegant mouthfeel, fresh and textured, and the recollection of the fruity, spicy and caramelised notes bring exquisiteness to the roe deer reared on our estate, forming a flavoursome and also delicate dish.
