In Bodegas Arzuaga, identify with the scenario where their vineyards are cultivated and wines are made was always present. Hence, from the very beginning, the winery had a complete kitchen and dining facilities to face another of the great challenges: the advocacy for traditional cuisine that in recent years has been reinforced with a diversion focused on the avant-garde cuisine.
From the onset of this project that culminated in what now Arzuaga Group is, the Arzuaga restaurant order was identified – among other dishes – with the roasted suckling lamb, the watchword of the Castilla y León gastronomy and a relevance reflection the sheep sector boasts throughout the community, and especially in the province of Valladolid. For that reason, Arzuaga was one of the pioneers in being part of the Association de Asadores de Lechazo de Castilla y León (Castilla y León Suckling Lamb Rotisseries Association), a group in which we are members today.
Thus, in Arzuaga we acquired a new commitment: advocacy for suckling lamb, coming from the region’s herds and respect to the wood-fired oven – together with the characteristics of a suckling itself – are still gaining attention and is so in demand by the tourists and visitors arriving in the region.
The first thing we highlight about suckling lamb is that it only feeds on breast milk, which makes its meat much softer and more delicate. The contrast comes, when trying it, we discover a crispy and tasty skin that achieves a perfect combination in the mouth. A roast that is only made with water and salt, but with a delicious flavour and texture that conquers all the tables that decided to try it. In short, they opt for one of the most representative recipes of the Duero basin and one of the specialities of the Arzuaga’s traditional restaurant kitchens.
Roasted suckling lamb in a wood oven is, undoubtedly, one of the attractions of Bodegas Arzuaga and has become a compulsory pairing in our traditional restaurant. We put all our love for that and the guests who visit us confirm such result.
