Our menu, with the best selection of raw materials, offers a wide variety of dishes made with natural products. Today on our blog, we’re going to tell you about the skewered suckling lamb roasted over shoots from Bodegas Arzuaga’s vineyards, a traditional recipe that’s turned into one of our quintessential menu items. It also stands for the traditional cuisine of Ribera del Duero since it features suckling lamb, a product with infinite possibilities in the kitchen. A real winner on the tables in our dining room!

That’s why today, we’d like to show you a recipe that brings together everything that sets us apart: Arzuaga-style suckling wild boar, confited at a low temperature and with a crispy finish.
Today, however, we’d like to focus on one of our favourites: sushi and our Arzuaga Rosae. This is a pair that shine separately on their own, but stand out like no other when served together. Our rosé brings out all the nuances of the sushi, from its simplest versions to those considered real delicacies. If you have the chance, you have to accompany a glass of our Rosae with a sea urchin nigiri. The explosion of flavour pairs perfectly with this rosé. We also recommend trying it with a flambéed sea bass or marinated mackerel nigiri. The sensations of combining our wine with these delicious morsels will surprise you.
And that’s exactly what we’ve got at Arzuaga’s traditional restaurant: a plate of Joselito ham and a glass of Arzuaga Reserva that’s a match made in heaven. The ham, cut by hand by our professionals, is at the perfect point of maturation and will give you a characteristic flavour and oiliness that will stay on your palate. The streaks of fat on this ham of exceptional quality give it a juiciness and an intense, long flavour that fill your mouth as you savour it.
