Arzuaga’s traditional restaurant is well known for its famous meat dishes, especially the suckling lamb, both roasted as well as in succulent kebabs or tasty chops. But these dishes also include beef sirloin, duck confit and veal entrecote, without forgetting our thick stews, veal cheeks in red wine, deer ragu or wild boar with poached potatoes. But today, we wanted to look at the other side of our cuisine, the one that prepares fish with delicateness and care. More specifically, we wanted to focus on the barbecued wild turbot, a perfect treat for savouring during these initial weeks of springtime.

Wild turbot has been one of the most well-loved fish since ancient times and it’s common to see it shown in the mosaics that covered the floors of wealthy Roman homes, and that’s because the patricians ate it. It’s even said to be one of Caligula’s favourite dishes. Its firm, very light and tasty white flesh makes wild turbot a favourite fish among chefs, who know that to get a perfect result, you have to pay close attention to the heat and the dressing.
